What to see The centre of the town is the Collegiate Church of Santa Juliana, where the mediaeval hamlet rose around, and which later lent its name to the current Santillana del Mar. The historic centre is reached on Calle de Santo Domingo street. The oldest civic building can be viewed in the main square: Merino Tower and Don Borja Tower, as well as other standout buildings such as the Town Hall and Barreda-Bracho Palace, now a Parador hotel. Nature Just 2 kilometres outside town is a real treasure: the Altamira Caves, considered to be the “Palaeolithic Sistine Chapel” and declared a UNESCO World Heritage Site. Although visits are restricted, the Altamira Museum houses the neo-cave, an exact copy of the real caves. Gastronomy Discovering the cuisine of Santillana del Mar is a real pleasure. Don't miss the ‘lebaniego' and ‘montañés' casseroles (made with beans, meat and cabbage), the yearling steak, the sea bream or the famous ‘sobaos pasiegos' (sponge made with butter, flour and egg).
